Cheesy Spinach-Stuffed Chicken “Lasagna” Boats

You get all the flavors of a Sunday dinner without the pasta coma. The chicken stays incredibly juicy (the filling seals in all the moisture), and honestly? It tastes like you’re cheating on your diet when you’re actually doing something really nice for your body.

What You’ll Need

The chicken:

4 large boneless, skinless chicken breasts

Salt, pepper, garlic powder, Italian seasoning

The filling:

1 cup ricotta cheese

1 cup fresh spinach, chopped and really squeezed dry

½ cup shredded mozzarella

1 egg (this holds it all together)

Italian seasoning

The rest:

1½ cups low-sugar marinara

1 cup shredded mozzarella + ¼ cup parmesan for topping

How to Make It

1. Prep the chicken

Butterfly each breast by slicing horizontally through the middle—don’t cut all the way through, you’re making a pocket, not dividing it in half. Season inside and out with salt, pepper, and garlic powder.

Quick note: If your chicken breasts are really thick on one end, give them a gentle pound with a meat mallet. Otherwise, you’ll end up with dried-out edges before the thick part cooks through.

2. Make the filling

Mix the ricotta, squeezed-dry spinach (I’ll say it again: squeeze it dry), ½ cup mozzarella, egg, and Italian seasoning. If the mixture feels too thick or stiff, add a splash of broth or cream—just enough to make it spreadable.

3. Stuff and seal

Spoon the filling into each pocket. Don’t be shy, but don’t overstuff either. Use toothpicks to close the edges so nothing leaks out while it bakes.

4. Assemble

Spread a thin layer of marinara on the bottom of your baking dish (this prevents sticking and adds flavor from underneath). Place the stuffed chicken on top, then cover each breast with more sauce and the remaining cheeses.

5. Bake

375°F for 35-40 minutes, until the chicken hits 165°F internally and the cheese is golden and bubbly.

Want it more golden? Pop it under the broiler for 2-3 minutes at the end. But watch it—cheese goes from perfect to burnt faster than you can say “dinner’s ready.”

6. Let it rest

Give it 5-10 minutes before serving. This keeps all those juices inside the chicken instead of spilling onto your plate. And don’t forget to pull out those toothpicks!

The One Thing That’ll Make or Break This

Wet spinach = watery filling = sad, soggy chicken. Use a clean kitchen towel or paper towels and really wring it out. This step is not optional.
