• 1 cup unsalted butter, softened
• ¾ cup packed light brown sugar
• ¼ cup granulated sugar
• 1 large egg
• 2 teaspoons vanilla extract
• 2 ¼ cups all-purpose flour
• 1 teaspoon baking soda
• ½ teaspoon salt
**For the cinnamon sugar coating:**
• ⅓ cup granulated sugar
• 1 tablespoon ground cinnamon
**INSTRUCTIONS:**
Preheat your oven to 350°F and line a baking sheet with parchment paper.
Beat the softened butter with both sugars until it’s light and fluffy—about 3 minutes. This step matters.
Mix in the egg and vanilla until everything’s smooth and creamy.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually fold the dry ingredients into the butter mixture until just combined. Don’t overmix.
